Lemon Bars
Brighten your day with lemon bars, where a buttery crust meets a tangy citrus filling for a delightful balance of sweetness and tartness in every bite
INGREDIENTS
Crust:
1 cup all-purpose flour
1/2 cup cannabutter, cubed
1/4 cup powdered sugar
A pinch of salt
Lemon Filling:
1 1/2 cups granulated sugar
1/4 cup all-purpose flour
4 large eggs
2/3 cup freshly squeezed lemon juice
Zest of 2 lemons
1/4 tsp baking powder
(Optional) powdered sugar for dusting
INSTRUCTIONS
Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking pan and line it with parchment paper, leaving an overhang for easy removal.
In a bowl, combine the flour, powdered sugar, and a pinch of salt. Add the cubed cannabutter until it resembles coarse crumbs.
Press the crust mixture evenly into the bottom of the prepared baking pan.
Bake the crust in the preheated oven for 15-20 minutes or until lightly golden. Allow it to cool while you prepare the filling.
In a large bowl, whisk together the granulated sugar and flour and beat in the eggs one at a time. Stir in the lemon juice, lemon zest, and baking powder until well combined.
Pour the lemon filling over the crust. Bake the lemon bars in the preheated oven for 25-30 minutes or until the edges are set, and the center is jiggly.
Allow the lemon bars to cool completely in the pan on a wire rack and once cooled, refrigerate the bars for at least 2 hours or overnight to set.
Lift the chilled lemon bars from the pan and cut them into bars. Dust with powdered sugar if desired.
Serve chilled and enjoy responsibly.
