INGREDIENTS
Cupcakes
1 ½ cup of AP flour
1 ½ tsp of baking powder
¼ tsp of salt
8 tbsp of J & Jay’s cannabutter
1 cup of sugar
2 large eggs
1 egg white
½ cup milk
1 tbsp vanilla extract
Frosting
1 ¼ cup of butter
2 ½ cup of powdered sugar
2 tsp of vanilla extract
2 tbsp of heavy cream
INSTRUCTIONS
Cupcakes
Preheat the oven to 350’F and prepare 2 cupcake pans with cupcake liners
Prepare the dry ingredients – In a mixing bowl whisk together flour, salt, and baking powder then set aside.
Prepare wet ingredients – in a new mixing bowl, mix together J & Jay’s cannabutter and sugar. Beat in the eggs and egg white into the bowl then add the vanilla extract. Mix until uniform.
Slowly mix together the dry ingredients into the wet mixing bowl while slowly adding in the milk in between. Mix until uniform.
Pour the batter into the cupcake liners, filling to about ¾ full.
Bake for approximately 20 minutes. Insert a toothpick into the center of the cupcake to check – if it comes out clean then the cupcakes are ready.
Allow the cupcakes to cool for about 10 minutes.
Buttercream Frosting
Cream the butter for 1 to 2 minutes until light textured.
Slowly mix in the powdered sugar into the butter.
Add in heavy cream, salt and vanilla extract and mix until the mix is uniform, light, and creamy.
When the cupcakes have cooled down, fill the piping bag and pipe the frosting on top of the cupcakes
TIPS
Cannabutter can be incorporated in the cupcake or the frosting, or both depending on dosing preferences.
The sweetness of the frosting helps mask the THC taste making it a better infusing option for those avoiding the weed flavour.
Dosing per cupcake can be calculated by dividing the total amount of THC added by the number of cupcakes made from the batter.
