Gingerbread Cookies
Soft, spicy, and perfectly sweet, these gingerbread cookies are the ultimate holiday treat that will fill your kitchen with festive aromas and leave you craving more
INGREDIENTS
Dry Ingredients:
• 2 3/4 cups all-purpose flour
• 1 tsp baking soda
• 1 1/2 tsp ground ginger
• 1 tsp ground cinnamon
• 1/2 tsp ground nutmeg
• 1/4 tsp ground cloves
• 1/2 tsp salt
Wet Ingredients:
• 1/2 cup (1 stick) cannabutter, softened
• 1/2 cup regular unsalted butter, softened
• 3/4 cup packed brown sugar
• 1 egg
• 1/2 cup molasses
• 1 tsp vanilla extract
Optional Decorations:
• Powdered sugar, for dusting
• Royal icing or decorative sprinkles
INSTRUCTIONS
In a medium bowl, whisk together the flour, baking soda, ginger, cinnamon, nutmeg, cloves, and salt. Set aside.
In a large mixing bowl, beat the cannabis-infused butter, regular butter (if using), and brown sugar with a hand or stand mixer until light and fluffy (about 2–3 minutes).
Mix in the egg, molasses, and vanilla extract until well combined.
Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
Divide the dough in half, flatten into discs, and wrap in plastic wrap. Refrigerate for at least 1 hour (or up to overnight) to make the dough easier to roll out.
Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper or silicone baking mats.
On a lightly floured surface, roll out one disc of dough to about 1/4 inch thick.
Use cookie cutters to cut out your desired shapes (gingerbread men, stars, trees, etc.) before transferring the cookies to the prepared baking sheets, spacing them about 1 inch apart.
Bake for 8–10 minutes, or until the edges are just set.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Once cooled, decorate with royal icing, sprinkles, or a dusting of powdered sugar before serving.
