Cheesy Quesadillas

INGREDIENTS

  • 2 large flour tortillas

  • 1 1/2 cups shredded cheese (cheddar, mozzarella, or a blend)

  • 2 tbsp of cannabutter or infused olive oil

  • Optional fillings: cooked chicken, sautéed vegetables, sliced jalapeños, etc.

  • Salsa, sour cream, or guacamole (for serving)

INSTRUCTIONS

  1. Lay out the flour tortillas flat on a clean surface.

  2. Sprinkle a generous layer of shredded cheese evenly over one half of each tortilla. Add any optional fillings over the side of cheese, being careful not to overfill the tortilla.

  3. Carefully fold the other half of the tortilla over the cheese and fillings, creating a half-moon shape.

  4. Choose a non-stick skillet or frying pan and place it over medium heat. Add 1 tbsp of cannabutter or cannabis-infused olive oil to the pan and coat it fully.

  5. Carefully place the folded tortilla into the pan. Let it cook for 2-3 minutes, or until the bottom becomes golden and crispy.

  6. Flip the quesadilla to cook the other side until crispy.. If needed, add the remaining tablespoon of cannabutter or infused olive oil to the pan before flipping.

  7. Slide the quesadilla onto a cutting board and let it cool before slicing with a knife.

  8. Serve your cheesy quesadillas with a side of salsa, sour cream, or guacamole for dipping.
