Caesar Dressing

Elevate your salads with our creamy, tangy Caesar Dressing, a perfect blend of garlic, anchovy, and Parmesan that will add a burst of flavor to every bite!

INGREDIENTS

• 1/2 cup cannabis-infused olive oil

• 2 cloves garlic, minced

• 2 anchovy fillets, minced (or 1 tablespoon anchovy paste)

• 2 tbsp freshly squeezed lemon juice

• 1 tsp Dijon mustard

• 1 tsp Worcestershire sauce

• 1/2 cup mayonnaise

• 1/4 cup grated Parmesan cheese

• Salt and pepper to taste

INSTRUCTIONS

  1. In a small saucepan, heat the cannabis-infused olive oil over low heat until warmed. Do not bring it to a boil.

  2. Remove the saucepan from heat and let the olive oil cool to room temperature. This will allow the cannabis to infuse into the oil.

  3. In a mixing bowl, combine the minced garlic, minced anchovy fillets (or anchovy paste), freshly squeezed lemon juice, Dijon mustard, and Worcestershire sauce. Whisk the ingredients together until well combined.

  4. Gradually whisk in the cooled cannabis-infused olive oil into the dressing base. Whisk continuously to emulsify the oil with the other ingredients.

  5. Once the oil is fully incorporated, add the mayonnaise and grated Parmesan cheese to the bowl. Whisk the mixture until smooth and creamy.

  6. Taste the Caesar dressing and adjust the seasoning with salt and pepper to taste. Note that the anchovies and Parmesan cheese are already salty, so add salt sparingly.

  7. Transfer the Infused Caesar Dressing to a jar or airtight container. Cover and refrigerate the dressing for at least 30 minutes before serving to allow the flavors to meld together.

  8. Serve the chilled dressing over crisp romaine lettuce, topped with crunchy croutons and additional grated Parmesan cheese, if desired.

TIPS

• For an extra creamy texture, blend the dressing in a food processor or blender until smooth.

• Store the dressing in an airtight container in the refrigerator for up to a week.

• Adjust the garlic and anchovy levels to suit your taste preference for a milder or bolder flavor.
